Ranger Cookies

Ranger Cookies

1/2 cup vegetable shortening

1/2 cup sugar

1/2 cup brown sugar

1 egg

1 cup flour

1/8 teaspoon salt

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon vanilla

1/2 cup oatmeal

1 cup cornflakes

1/2 cup chopped nuts

1/2 cup coconut (optional)

1. Cream shortening, sugars, and egg. Add flour, salt, baking powder, and baking soda. Add remaining ingredients and mix.

2. Drop by teaspoon on greased cookie sheet. Bake at 350 degrees for approximately 10 minutes or until lightly browned at edges.

      I am not sure of the origin of the name. They have always been a favorite of my children. The recipe came from an old recipe book by the Extension Home Economists in Arkansas. Thanks for visiting.
